Banana Chip Muffins

I have this slight obsession with bananas and chocolate.

This recipe perfectly brings the two together.

And it's great if you have REALLY ripe bananas or if you have some frozen bananas that you need to use!



Ingredients:

1/2 cup butter, room temperature
1 cup granulated sugar
2 large eggs
2 large bananas, ripe or very ripe, mashed
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk*
1 or 2 cups of chocolate chips

*Buttermilk: milk + 1 tbs white vinegar*


Preparation:

Preheat oven to 400F.

Grease or line 12 muffin cups (my batch made 20 muffins).

Cream butter and sugar until light and fluffy. Beat in eggs. Add mashed bananas and vanilla and beat until smooth.

Whisk together the flour, salt, baking powder and soda in separate bowl. Stir this mixture into the butter mixture, alternating with the buttermilk. Stir just until dry ingredients are moistened. Gently stir in the chocolate chips.

Spoon batter into prepared muffin cups or liners. Bake at 400 degrees for about 15-18min, or until tops are lightly brown. Cool muffins on rack for a few minutes (if they last that long).

Serve and enjoy with a glass of milk.
