Turkey Leftovers


To be honest, I can't wait to stuff myself for Thanksgiving Day. I am blessed to be able to do so. I also can't wait for leftovers, but as we all know, it can get boring eating the same thing everyday. Except for pie. There is always room for pie.

Chicken & Rice Stuffed Peppers


So, I started meal planning this past week. The time it takes to sit down and plan it out, really pays off when it comes time to going to the grocery store and after work when you don't know what to cook. Less stress. Going to the grocery store was a breeze! Minus the sold out chicken breasts... that's another story. 

If you've followed me on here or instagram, you know I LOVE Skinnytaste! Pretty much all the recipes on my meal plan for the next 2 weeks are all from Skinnytaste. 

I've been learning to cook and to cook with what I have, which isn't much. I pretty much adapt whatever I have to the recipe I am using. Luckily, everything has always turned out fabulous.

Thus, I give you this delicious recipe! 



Chicken/Rice Stuffed Peppers (for 2)
adapted from Skinnytaste

  • 2 large chicken Breasts, cooked & shredded. (Mine were marinated in Dale's, yum!)
  • 1 garlic, minced
  • 1/4 onion, minced or onion powder
  • salt to taste
  • 2 large green bell peppers, washed
  • 1 cup fat free chicken broth
  • 1 1/2 cups cooked rice or 1 Success boil-in-bag, cooked
  • 1 tbsp olive oil
  • Shredded Colby & Monterey Jack Cheese to sprinkle on top

Directions:
Heat oven to 400°. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame. Add onion and garlic to the pan. Saute about 2 minutes and chicken. Add 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes. Combine cooked rice and chicken together.

Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can. Place all stuffed pepper halves in the baking dish and pour the remainder of the chicken broth on the bottom of the pan. Cover tight with aluminum foil and bake for about 35 minutes. Top with cheese and enjoy!!

WILW!

Yes, I Michelle have cooked dinner TWICE this week and they turned out great! 
No, the world is not ending. 

{I added an extra cup of whole wheat rice}

{I substituted onion for 2 tsp of onion powder; used a can of diced tomatoes w/green chilis}

Aside from healthiness... I am *LOVING* my home girl Chels' Girlfriend Cookies. Y'all have got to make some. 



*LOVING* girl time with BJJ. Friday we checked out a new cafe in town before getting a couple glasses of wine. It was so cute. The Vanilla Chai I had was different but sooo good.

Got Milk??


Y'all. I love milk. 
Better yet, I LOVE chocolate milk.

I don't like to think about what all is in food because I easily get grossed out by it.

Take shrimp for example. 
If I think about how slimy it is or how it smells, I won't be able to eat it.
Other times, I will pop em right in my mouth.

Back to milk. 

Until yesterday, I loved it.

Thanks to this post from Raven {A Momma's Desires and Pacifiers} and this post, I can no longer drink a nice cold large glass of cow milk. 


WARNING: If you read those posts...it WILL spoil your milk.



Thinking about it makes me want to vomit. 


As of today, I am now a soy milk drinker. 

I tried some Silk chocolate soy milk.

Y'all...that stuff tastes like dirty water! I had to chug it down. 

But apparently it is way better for you. It has 50% more calcium! 

Hope soy milk and I will learn to love each other.



Do y'all drink soy milk? What's your favorite?

Have y'all read Skinny Bitch? I'm scared to.

What about rice milk? 

Help me.



PS- don't worry, I am not going all vegetarian on you. this girl loves her meat... but I do need to eat more veggies.

FOODIE FUN!

Hey y'all!!! I am backkkkk! 

Atlanta was great! I sure did eat some amazingly GREAT food!! So good it makes me wanna move there. Seriously. I stayed in Buckhead...which I completely fell in love with. SWOON! 

Hope your not hungry because I am about to share some delicious pictures with ya!






Unfortunately I didn't get a picture of my favorite, the three amigo's appetizer {queso, guac, salsa + chips}. Seriously, the best guacamole and queso of your life!! It's obviously the poppin' place around Buckhead because it was a packed house! They are known for their taco's which were equally amazing and cheap and go fabulous with Dos Equis Lager! Score! There was also some wonderful entertainment, ie- people watching. Double score!

Top Chef's Richard Blais joint! OHHHH MYYYY GOSSHHH! What a treat for your taste buds! Very unique and definitely a place all should visit at least once.

I got the Mushroom/Swiss Burger...the cheese was Swiss Foam! The fries were so so good!

Heather got the Pork Chorizo-love the presentation. The best was the cherry tomato salad!

They also had Dr. Pepper... in a glass bottle!!! #awesome

Okay, but REALLY the best was the Nutella & Roasted Marshmellow milkshake!! 

I am craving one as I write this... #delivertoflplease

Came here for brunch on Sunday and what a fabulous little place!!! I personally didn't like what I got but you can't go wrong with bottomless bellini's and mimosa's for $10!

I got an egg/tomato/bacon croissant sandwich!  

With some yummy fruit!

 What I really should have gotten was the French Toast filled with peach creme. #ilovefrenchtoast


 Wipe the drool from your mouth.
